salted marshmallow & brown sugar cookies
with browned butter + why i love cleaning my bedroom
cleaning my bedroom is the ultimate reset for me. picking up my clothes, tidying my desk, and changing my sheets completely changes my mood and outlook on life. i feel like i can do anything once my room has been cleaned. and don’t even get me started on vacuuming. once i vacuum, oh, look out world, she’s-a comin’.
it’s a great, meditative way of putting my life back in order. a lot of the times i tell myself i can’t complete something unless i’ve done something else beforehand that would set me up well to complete my main task (if that makes any sense). i love looking up from my bed and seeing a clean floor. it makes not only my space feel brighter and lighter and bigger, but my heart and mind too.
clean room = ultimate happiness.
have you ever found yourself eating chocolate chip cookie dough and thought, “i just want to pick the chocolate chips out and eat the dough without any chocolate?” well, this recipe is sort of like that. it’s an elevated way for me to scratch that itch of wanting a chocolate chip cookie type of cookie, but feeling maxed out on chocolate (it happens!).
i basically took my browned butter chocolate chip cookie recipe and changed a few minor things, such as the sugar, flour and the addition of marshmallow fluff. i love how these cookies are almost like a chocolate-less campfire s’more! the browned butter gives it that nutty flavor, the brown sugar for warmth and the fluff is a nice, sticky and sweet balance to the salt, plus it gets all gooey and toasty in the oven.
this might be my new favorite cookie. also, you could DEFINITELY add chocolate chips/chunks/whatever you like to this dough and really have it fully embody the whole s’mores thing. i hope you guys like this recipe as much as i do! :-)
salted marshmallow & brown sugar cookies
226 g (2 sticks) salted butter
382 g all purpose flour
1 tsp baking soda
275 g brown sugar
2 eggs + 1 egg yolk
4 Htbsp marshmallow fluff1
1/2 tsp salt
2 tsp vanilla
flaky sea salt, for sprinkling
preheat oven to 350F and line baking sheet with parchment paper, set aside.
in a medium saucepan, brown butter on medium-low heat, stirring continuously until you see milk solids begin to form and brown on the bottom of your pan and butter smells slightly nutty and robust. we are looking for stage d. once browned, pour into a heat proof bowl and allow to cool in the fridge for about 10-15 minutes (we want the butter to stay melted, just not be ripping hot).
in a large bowl, combine sugar, salt, vanilla, cooled brown butter and whisk. whisk in eggs + yolk one at a time until smooth, followed by the flour and baking soda. gently swirl in marshmallow fluff.
allow cookie dough to chill for at least 30 minutes, then, portion and scoop cookies on lined baking sheet and sprinkle with flaky salt (top with more marshmallow fluff if desired).
bake at 350F for 8-10 minutes, or until edges are slightly golden brown. allow to fully cool on baking sheet, then serve and enjoy!
